This recipe came about after my fridge was becoming rather full of vegetables that needed using up. It's so simple to make and is an easy supper idea as you pop it all in one pot. I specify the veggies to use but you can really use whatever you have to hand.


  • 1 white or red onion diced

  • 2 celery sticks diced

  • 1-2 peppers roughly chopped

  • A handful of mushrooms chopped

  • 1 courgette chopped

  • 2 tomatoes roughly chopped

  • 2 garlic cloves chopped or minced

  • fresh or dried herbs of your choice 

  • The zest and juice of 1 lemon

  • 1 can/jar of passata or chopped tomatoes


  1. Fry the onion and celery until soft in olive oil.

  2. Add in the garlic and stir for a few minutes. Add in all the veggies and dried herbs. Stir well.

  3. Pour in a the passata and leave to simmer for 20 minutes. Top up with water if it looks too thick.

  4. Squeeze in the lemon juice and zest. Season with salt and pepper to taste. Before serving stir in a small handful of chopped herbs.

This dish is delicious served with crumbled feta, steamed fish or chicken.
