

MEDITERRANEAN SOLARA CHICKEN
Solara or "Sun" Chicken is a vibrant Mediterranean-inspired chicken dish that brings together the sweet brightness of oranges with the briny depth of olives. INGREDIENTS

4 chicken legs

2 tbsp olive oil

1 large onion, sliced

3 garlic cloves, minced

2 red peppers, sliced

1 tsp smoked paprika
-
1/2 a length chorizo , sliced

100g pitted green olives

1 orange sliced
-
Salt and black pepper, to taste

200g brown rice
-
Fresh parsley, for garnish (optional)

Good quality chicken stock
METHOD

Begin by browning chicken and chorizo in a frying pan in a little oil to crisp up the skin, then move to a separate plate.

Using the juices from the chicken and additional oil if needed gently fry the onion, then add the garlic and peppers until soften. Add in the cooked chorizo.

Add in the dry rice and smoked paprika. Mix to coat well, then add 400ml of chicken stock. Leave to get to a gentle simmer.

Mix and then tuck on top the chicken legs along with the sliced orange and scatter with olives.

Season: Taste and add sea salt and freshly ground black pepper to your liking.

Cover and cook on a gentle heat/oven temperature for 45- 1 hour minutes.

Serve with crisp green lettuce or green beans.
