SIMPLE SUMMER SALAD DRESSINGS

Salad Dressings needed be bought from the supermarket, it's so easy to make your own with simple store cupboard staples. Here are three favourites.

Classic French Dressing

INGREDIENTS​​

  • 1 tbsp organic apple cider vinegar

  • 1 tsp Dijon mustard

  • 5 tbsp extra virgin olive oil

  • Sea salt and fresh black pepper

  • Optional squeeze of lemon juice

 

METHOD

Put all ingredients into a jar and shake to mix. Lasts for 4-5 days. Drizzle over salads leaves or cooled steamed potatoes.

Creamy Ranch Dressing

INGREDIENTS​​

  • 2 tbsp plain live yogurt

  • Squeeze of 1/2 lemon

  • 1 tbsp milk to loosen the dressing

  • 1/2 tsp Dried Dill

  • 1/4 tsp Dried Garlic

  • 1/2 tsp Dried Parsley

  • Fresh or dried chives 1/2 tsp

  • 1/2 teaspoon of Seasalt

METHOD

Put all ingredients into a jar and shake to mix. Lasts for 3-5 days. Works well over cooled steamed potatoes, or crisp cos lettuce and cucumber.

Asian Style Peanut Dressing

INGREDIENTS​​

  • 2 tbsp soy sauce, 

  • 1 tbsp toasted sesame oil, 

  • 2 tbsp olive oil, 

  • juice of 1 lime, 

  • 1 tsp of peanut butter

  • 1 tsp honey

METHOD

Put all ingredients into a jar and shake to mix. Lasts for 3-5 days. Use mixed into grated carrot and cabbage slaw, mix through cold noodles with sliced spring onion and cucumber.
