

THREE CAN SMOKEY BEAN CHILLI
You won't miss the meat in this smokey rich chilli. Packed full of beans and legumes which excellent sources of dietary fiber, protein & B vitamins.
INGREDIENTS

1 can of kidney beans

1 can of black beans/cannolini beans

1 can chopped tomatoes

1 cup of dried red lentils

1/2 a butternut squash cubed

1 onion diced
-
2 garlic cloves
-
2 celery stalks chopped
-
1 pepper sliced
-
2 teaspoons smoked paprika
-
1 teaspoon ground cumin
-
Chilli fresh/powder to suit
METHOD
In a large saute pan, heat 1 tablespoon olive oil over medium-high heat. Add the onion and celery cook for 2-3 minutes.
Next add the pepper, garlic, cubed squash and salt and pepper..
Add in the spices and cook for a few minutes to release their fragrance.
Add in the three cans of beans/tomatoes. Ensure that you rinse out the can of tomatoes and add 1 can of water. Let this simmer for 20-25 minutes. Add more water if needed.
Serve with wholegrain rice, crisp salad and homemade guacamole.
